For July's recipe we look at creating the perfect breakfast treat with our delicious fluffy pancakes. This recipe makes around 4-6 pancakes and can be combined with your favourite vegan chocolate, fruit or dairy free ice cream if you're enjoying them for dessert.

Ingredients to make Pure Heavenly Pancakes

  • 1 cup gluten free flour
  • 2 tbsp baking powder
  • 1/4 tsp salt
  • 1 cup almond milk
  • 1 tbsp apple cider vinegar
  • 1 tsp vanilla extract
  • 2 tbsp melted vegan butter
  • Pure heavenly chocolate, diced bananas, and raspberries for toppings

Step by Step: 

STEP 1

In a medium bowl, whisk together the flour, baking powder, and salt.

STEP 2 

In a separate bowl, mix together the almond milk, apple cider vinegar, and vanilla extract.

STEP 3 

Add the melted vegan butter to the wet ingredients and mix well.

STEP 4

Add the wet ingredients to the dry ingredients and mix until just combined. The batter may have some lumps, but that's okay.

STEP 5

Heat a non-stick pan over medium heat and spoon 1/4 cup of batter into the pan for each pancake.

STEP 6

Cook the pancakes until small bubbles form on the surface, then flip and cook until the other side is golden brown.

STEP 7

Repeat until all the batter is used up, you should get about 4-6 pancakes.

STEP 8

To serve, place the pancakes on a plate, top with the diced chocolate, sliced bananas, and raspberries. The heat from the pancakes will melt the chocolate, creating a delicious creamy topping!
